Ingredients

  • 1 cup Justins Almond Butter
  • 6 tbsp raw sugar
  • 1 large egg

Instructions

  1. 1

Begin by preheating your oven to 350°F (175°C). Adjust the racks so that one is in the upper third and the other in the lower third of the oven. Lightly coat two nonstick baking sheets with cooking spray or line them with silicone baking mats for easy cleanup.

  2. 2

In a medium-sized mixing bowl, combine the almond butter, sugar, and egg using a spatula. Mix thoroughly until the mixture is smooth and all ingredients are well incorporated. Using a tablespoon, scoop out level portions of the dough and place them about 1 inch apart on the prepared baking sheets. Use the tines of a fork to gently press down on each mound, creating a decorative crosshatch design.

  3. 3

Place the baking sheets in the oven and bake for approximately 10 minutes, or until the edges turn a lovely golden brown. Be sure to rotate the sheets halfway through the baking time for even cooking. Once baked, allow the cookies to cool completely on the sheets (they will remain soft until they have cooled) before transferring them to a wire rack for further cooling.
