Ingredients

  • 2 tablespoons red wine vinegar
  • teaspoon crushed black pepper
  • 1 tablespoon Dijon mustard
  • 2 tablespoons parsley
  • 2 garlic cloves
  • 1 pound asparagus
  • ¼ teaspoon kosher salt
  • 2 tablespoons extra virgin olive oil

Equipment Needed

  • Air Fryer

Instructions

  1. 1

In a small bowl, combine all the ingredients except for the asparagus, whisking until well blended. Drizzle the mixture over the asparagus, then use your hands to ensure each spear is evenly coated with the dressing.

  2. 2

Allow the asparagus to marinate for at least 10 minutes, or up to several hours, until you're ready to cook.

  3. 3

If necessary, cook the asparagus in batches, placing them in a single layer in the air fryer. Set the temperature to 400°F and air fry for 5 minutes. After this time, take the basket out and give it a good shake, then return it to the air fryer and continue cooking for an additional 3 to 5 minutes, adjusting the time based on the thickness of the spears.

Notes & Tips

  • Cook time will vary: This will depend on the thickness of your spears and the wattage of your air fryer.
  • No Air Fryer, No Problem: Bake 400F 10 to 15 minutes.
  • Work in batches as needed: Never crowd the air fryer basket. You want the air to circulate around the food to get crisp, browned edges.
