Ingredients

  • 1/2 teaspoon kosher salt
  • cooking string
  • 1/4 teaspoon ground black pepper
  • 1 pork tenderloin
  • 6 center cut strips bacon

    Begin by seasoning the pork tenderloin with salt and black pepper. Arrange the bacon strips on a cutting board, ensuring they are approximately the same length as the tenderloin itself.

    Take two strips of bacon and cut them in half (the thinner ends won't require a full strip). Position two halves side by side, followed by four whole strips, and then place the remaining two halves next to each other.

    Gently position the pork tenderloin on top of the bacon. Carefully roll the tenderloin up in a jelly-roll fashion, starting from one of the longer edges. Secure the rolled roast with kitchen twine, tying at intervals of 2 inches using pieces of string that are about 12 inches long.

    Slice the rolled tenderloin in half to ensure it fits comfortably inside the air fryer.

    Place the tenderloin pieces into the air fryer and cook at 400°F for 20 minutes, flipping them halfway through the cooking time. The pork is ready when an instant-read thermometer inserted into the thickest part registers between 145°F and 150°F. Allow the pork to rest for approximately 5 minutes before slicing. Cut into 12 even pieces.
