Ingredients

  • 1 cup picadillo
  • 8 Goya empanada discs
  • 1 teaspoon water
  • 1 egg white

Instructions

    Generously coat the air fryer basket with olive oil spray to prevent sticking, or alternatively, use air fryer parchment paper to line the basket.

    Spoon 2 tablespoons of picadillo onto the center of each dough disc. Fold the disc in half and press the edges together, sealing them with a fork. Continue this process with the remaining dough.

    In a bowl, combine the egg whites with a splash of water, then use this mixture to brush the tops of the empanadas.

    Arrange the empanadas in a single layer in the air fryer, cooking at 350°F for 8 minutes, flipping them halfway through, or until they reach a golden-brown color. Once done, remove them from the air fryer and repeat the cooking process with the remaining empanadas.

Notes & Tips

  • How to Bake Empanadas in the Oven: If you don’t have an air fryer, you can also bake them in the oven at 400 degrees on a nonstick baking sheet for about 18 to 20 minutes until golden.
  • How to Freeze Empanadas: You can flash freeze the uncooked empanadas on a sheet pan. Once frozen, transfer to a freezer-safe container for up to 3 months.
  • Air Fry From Frozen: Pop the frozen empanadas right into your air fryer and air fry 350F for about 12 minutes, turning halfway until golden and hot.
