In a sizable mixing bowl, blend the Brussels sprouts with 1 tablespoon of olive oil and ¼ teaspoon of kosher salt. Stir well to ensure they are thoroughly coated.
Transfer the Brussels sprouts into the basket of the air fryer and set the temperature to 350°F. Cook for approximately 14 minutes, or until they achieve a golden brown hue and are tender, shaking the basket halfway through for even cooking.
While the sprouts are cooking, take a small bowl and mix together the Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, black pepper, and the remaining ½ tablespoon of olive oil until well combined.
Once the air fryer timer goes off, open the basket and sprinkle the mixture evenly over the Brussels sprouts. Lightly mist with olive oil spray, then return to the air fryer and cook at 350°F for an additional 2 minutes, or until they turn golden.
