Ingredients

  • 1 pint heirloom cherry tomatoes
  • 3 cups baby arugula
  • 1 small whole Burrata cheese
  • 1 tablespoon balsamic glaze
  • 1/4 cup torn basil
  • 2 ounces sliced rustic loaf
  • 1/4 teaspoon salt
  • 4 large whole garlic cloves
  • 1 teaspoon olive oil

    In a mixing bowl, combine the tomatoes, minced garlic, 1 teaspoon of extra virgin olive oil, and 1/4 teaspoon each of salt and pepper. Gently toss the mixture together, then transfer it to the basket of the air fryer. Set the temperature to 400°F and cook for 10 minutes, giving the basket a shake halfway through.

    Arrange a bed of arugula on a serving platter. Carefully drain the burrata cheese and place it on top of the arugula. Spoon the roasted tomatoes over the cheese, ensuring to drizzle any of the flavorful juices that have collected. Finish by drizzling with balsamic glaze and sprinkling with additional basil, salt, and pepper. Serve alongside slices of bread.
