  • 1 tablespoon Cajun or Creole seasoning
  • 6 ounces fully cooked Turkey/Chicken Andouille sausage or kielbasa*
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 large red bell pepper
  • 1/4 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 24 (1 pound) cleaned and peeled extra jumbo shrimp

Instructions

    In a sizable mixing bowl, blend the Cajun spice mix with the shrimp, ensuring each piece is well-coated.

    Incorporate the sausage, zucchini, squash, bell peppers, and a pinch of salt, then drizzle with oil and mix thoroughly.

    Preheat your air fryer to 400°F.

    Working in two portions (ideal for smaller baskets), place the shrimp and vegetable mixture into the air fryer basket and cook for 8 minutes, giving the basket a shake 2 to 3 times during the cooking process.

    Once done, set the first batch aside and repeat the cooking process with the remaining shrimp and vegetables.
