Ingredients

  • 2 8-oz boneless skinless chicken breasts
  • 1/2 teaspoon kosher salt
  • 1/4 cup Italian dressing
  • 3/4 cup seasoned whole wheat breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dry Italian seasoning
  • 1 large egg
  • olive oil spray
  • 1/2 teaspoon garlic powder

    Halve the chicken breasts lengthwise to yield 4 cutlets. Gently pound them to achieve a thickness of 1/4 inch.

    In a shallow dish, season the chicken with salt, garlic powder, and Italian seasoning, then coat with Italian dressing. Allow it to marinate for a minimum of 1 hour (longer marination enhances flavor).

    In another shallow dish, mix together the breadcrumbs and parmesan cheese. In a separate shallow bowl, crack an egg. First, coat the chicken in the egg, then dredge it in the breadcrumb mixture. Transfer the coated cutlets to a clean surface and lightly spray both sides with cooking oil.

    Place the cutlets in a single layer in the air fryer basket, working in batches if necessary. Air fry at 400°F for 4 minutes until the top turns golden brown. Flip the cutlets, spray the other side with oil, and continue air frying for an additional 3 to 4 minutes, until they are golden and fully cooked.
