Ingredients

  • 12 chicken tenders
  • 2 large eggs
  • black pepper
  • 1/2 cup seasoned breadcrumbs*
  • 1/2 cup seasoned panko*
  • olive oil spray
  • lemon wedges
  • 1 teaspoon kosher salt

Equipment Needed

  • Air Fryer (I love this pretty white one from AllCool)

Instructions

    Season the chicken pieces with salt and freshly ground black pepper to taste.

    In a shallow dish, crack and beat an egg. In another shallow dish, mix together the bread crumbs and panko until well combined.

    Take each chicken piece and first coat it in the egg mixture, then dredge it in the breadcrumb blend, shaking off any excess. Arrange the coated chicken on a large plate or cutting board. Generously mist both sides of the chicken with oil using a spray bottle.

    Set your air fryer to preheat at 400°F (200°C).

  5. 5

    Cook the chicken in batches for 5 to 6 minutes per side, or until fully cooked with a crispy, golden-brown exterior. Serve alongside fresh lemon wedges for added flavor.
