Ingredients

  • 1/4 cup full fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 1 teaspoon fresh lemon juice
  • 1/8 teaspoon kosher salt
  • 1 1/2 lbs skinless wild cod
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1/2 lemon
  • 1/4 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1 cup plus 2 tablespoons seasoned panko breadcrumbs
  • 1 teaspoon Old Bay seasoning
  • olive oil spray
  • lemon wedges
  • 1/3 cup finely chopped dill pickles
  • 1 tablespoon fresh chopped dill

    Slice the fish into 16 pieces, each measuring approximately 4 x 1 inches.

    In a small bowl, mix the ingredients for the tartar sauce and place it in the refrigerator until you’re ready to serve.

    In a medium mixing bowl, whisk together the eggs, Dijon mustard, lemon juice, paprika, and salt.

    In another bowl, combine the Panko breadcrumbs with Old Bay seasoning.

    Dip each fish stick into the egg mixture first, then coat with the Panko crumbs. Set them aside.

    Arrange the coated fish sticks in the air fryer basket, working in batches if necessary, and lightly spray both sides with olive oil. Cook at 400°F for about 8 minutes, flipping them halfway through, until they are golden brown and crispy.
