Ingredients

  • 4 cups cauliflower florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 6 street taco size tortillas
  • pickled red onions
  • 6 tablespoons Peruvian Green Sauce
  • sour cream
  • cilantro
  • 1 red onion
  • 1/2 cup apple cider vinegar
  • 1/3 cup water
  • 1 tablespoon cane sugar or maple
  • 1 teaspoon kosher salt
  • 2 bay leaves
  • 1/2 teaspoon Tajin

Instructions

    In a medium mixing bowl, combine the cauliflower florets with olive oil, Tajin seasoning, smoked paprika, and a pinch of salt.

    Lightly coat the air fryer basket with cooking spray, then place the seasoned cauliflower inside. Cook at 400°F for 12 to 15 minutes, or until the cauliflower is golden brown and tender, giving the basket a shake halfway through the cooking time.

    In a small saucepan, bring the vinegar, water, sugar, and salt to a boil, stirring until the sugar has completely dissolved.

    Move the sliced onions to a heatproof bowl, add the bay leaves, and pour the hot liquid over the onions.

    Allow the mixture to cool down, then transfer it to a glass jar and store it in the refrigerator for at least overnight.
