In a small bowl, mix together the ingredients for the Lemon-Caper Mayo and place it in the refrigerator until you are ready to serve.
Use a paper towel to gently dry the salmon fillets. Cut the salmon into four pieces, each measuring approximately 4 x 4 inches. Sprinkle with 1/2 teaspoon of salt.
In a shallow dish, pour in the egg whites.
In another shallow dish, combine the panko breadcrumbs with the remaining 1/2 teaspoon of salt.
Take each piece of salmon and first coat it in the egg whites, then roll it in the panko mixture. Set the coated fish aside.
Lightly coat the air fryer basket with oil. Arrange the salmon pieces in the basket in a single layer, working in batches if necessary.
Mist the tops of the salmon with oil and air fry at 400°F for 8 minutes, flipping them halfway through, until they are golden brown and crispy.
Assemble the sandwiches by placing the cooked fish on buns, adding lettuce, and distributing the sauce evenly.
