Ingredients

  • 2 large eggs
  • 1/4 cup chopped red onion
  • 2 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 12 ounces cooked or canned wild salmon
  • 1/2 cup panko
  • olive oil spray
  • lemon wedges
  • 2 tablespoons mayo
  • 1/4 cup chopped dill

Instructions

    Line the air fryer basket with a sheet of parchment paper or lightly coat it with cooking spray.

    In a medium-sized mixing bowl, whisk together the egg, diced onion, dill, mayonnaise, mustard, and Old Bay seasoning until well combined. Gently fold in the salmon and panko breadcrumbs until everything is evenly mixed.

    Chill the mixture in the freezer for 10 minutes to firm it up and help it hold its shape. (If the mixture feels too moist, you can incorporate an additional tablespoon of panko.)

    Shape the mixture into 6 evenly sized patties, ensuring they are compact, and place them into the air fryer basket.

    Cook the patties in the air fryer at 400°F for 8 to 10 minutes, flipping them halfway through the cooking time, until they achieve a golden brown color.
