In a medium-sized mixing bowl, combine the ground turkey, oats, grated zucchini, chopped onion, 1/4 cup of ketchup, egg, salt, and black pepper. Use a fork to thoroughly mix all the ingredients until well incorporated.
Portion the mixture into 4 equal segments and mold each segment into a small loaf shape.
Place the mini loaves into the air fryer basket and set the temperature to 350°F. Cook for 15 minutes, then carefully flip each loaf, brush the tops with the remaining ketchup, and continue cooking for an additional 5 minutes, or until the internal temperature reaches doneness. If desired, sprinkle with parsley before serving.
