Ingredients

  • 1 pound 93% ground turkey
  • 1/4 cup ketchup
  • 1/3 cup minced onion
  • 1/3 cup grated zucchini
  • 1 large egg
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper

  • 1/3 cup quick rolled oats

Instructions

    In a medium-sized mixing bowl, combine the ground turkey, oats, grated zucchini, chopped onion, 1/4 cup of ketchup, egg, salt, and black pepper. Use a fork to thoroughly mix all the ingredients until well incorporated.

    Portion the mixture into 4 equal segments and mold each segment into a small loaf shape.

    Place the mini loaves into the air fryer basket and set the temperature to 350°F. Cook for 15 minutes, then carefully flip each loaf, brush the tops with the remaining ketchup, and continue cooking for an additional 5 minutes, or until the internal temperature reaches doneness. If desired, sprinkle with parsley before serving.

Notes & Tips

  • To lower the sugar, swap traditional ketchup with sugar free such as Primal Kitchen.
  • If you don’t have an air fryer, bake this on a sheet pan 425F 30 minutes like I do for this sheet pan meatloaf recipe.
