Ingredients

  • 1 14 oz canned low-sodium black beans, rinsed and drained
  • 3/4 cup sugar
  • 1/2 teaspoon oil
  • 1 tablespoon unsweetened almond milk
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon of freshly ground coffee or instant coffee
  • 1 cup semisweet chocolate chips
  • 1/2 cup cocoa powder
  • 2 large eggs

    Begin by setting your oven temperature to 350° F (175° C).

    Prepare a nonstick 9 x 9-inch square baking dish by applying baking spray and lining it with parchment paper, ensuring there’s a 2-inch overhang on each side.

    In a blender, combine the black beans, eggs, cocoa powder, sugar, oil, almond milk, balsamic vinegar, baking soda, baking powder, and coffee. Blend until the mixture is completely smooth, then transfer it to a mixing bowl.

    Gently incorporate 1/2 cup of chocolate chips into the batter until evenly mixed.

    Pour the brownie mixture into the prepared baking dish. Evenly distribute the remaining chocolate chips on top of the batter.
