In a medium mixing bowl, combine the chopped apple, 1/8 teaspoon of cinnamon, agave syrup, and lemon juice. Set this mixture aside for later use.
Preheat your oven to 350°F (175°C). Lightly coat a 9 x 5-inch loaf pan with baking spray.
In another medium bowl, whisk together the flour, baking soda, nutmeg, cinnamon, allspice, and salt. Set this dry mixture aside as well.
In a large mixing bowl, blend the oil, egg whites, sugar, applesauce, and vanilla extract. Using a hand mixer or a stand mixer, beat the mixture on medium speed until it reaches a thick consistency. Be sure to scrape down the sides of the bowl.
Gradually add the flour mixture to the wet ingredients, mixing on low speed just until everything is combined. Avoid overmixing to keep the bread tender.
Gently fold in the apple mixture and the walnuts until evenly distributed.
Transfer the batter into the prepared loaf pan and place it in the center of the oven. Bake for approximately 55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for at least 20 minutes. For best results, let the bread reach room temperature before slicing.
