In a Dutch oven or a sturdy pot, combine the apples with 6 tablespoons of water.
Sprinkle the mixture with granulated sugar, brown sugar, cinnamon, allspice, and nutmeg, then stir everything together until well combined.
Partially cover the pot and cook over medium-low heat for 30 minutes, stirring occasionally, until the apples become soft and turn a deep brown color.
Remove the lid and use an immersion blender to puree the mixture until smooth.
Continue to simmer the apple mixture uncovered for approximately 2 hours on low heat, stirring often, until it reaches a thick consistency.
Transfer the apple butter into jars or containers, seal them, and store in the refrigerator.
