Ingredients

  • 2 1/2 lbs Gala apples
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt
  • 1/2 tablespoon fresh lemon juice
  • 1/2 cup water
  • 1/4 cup King Arthur white whole wheat flour
  • 1/4 cup King Arthur all purpose flour
  • 2 tbsp granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • pinch of salt
  • 2 tbsp chilled whipped butter
  • 1/3 cup low-fat buttermilk
  • 1 tbsp canola oil
  • 1 tsp light brown sugar
  • 6 tablespoons honey
  • 2 tbsp cornstarch

Instructions

    In a spacious, sturdy pot, mix together all the ingredients for the apple filling. Allow it to simmer over low heat for approximately 25 minutes, stirring gently from time to time until the apples become tender.*

    Evenly distribute the warm apple mixture into eight ramekins, each measuring 4 inches in diameter.

    Set your oven temperature to 400°F to preheat.

    In a medium-sized mixing bowl, combine the flours, granulated sugar, baking powder, baking soda, and salt, whisking them together well.

    Incorporate the chilled butter (ensure it remains cold) into the mixture using a pastry cutter (or two knives), blending until the mixture resembles coarse crumbs.

    In a separate small bowl, mix the buttermilk and oil together thoroughly.

    Pour this liquid mixture into the dry ingredients and stir until just combined, taking care not to overmix.

    Distribute the batter evenly over the apple filling in the ramekins.

Notes & Tips

  • *To cut back on sugar I used sweeter apples such as Gala. If you use tarter apples, such as Granny Smith you will have to add more honey. Taste the apples at this point and if you feel they need more honey, adjust at this point.
