In a small saucepan, combine the diced apples, ground cinnamon, maple syrup, and a small pinch of sea salt. Set the heat to low.
Stir the mixture to ensure everything is well incorporated, then cover the pan and let it simmer for approximately 10 minutes, stirring occasionally, until the apples become soft.
Once the apples are tender, remove the lid, raise the heat to medium, and allow it to cook for an additional 2-3 minutes, or until the sauce thickens slightly, clinging to the apples, and any excess liquid has evaporated.
Take the saucepan off the heat and let it cool while you prepare the oats.
In a separate small bowl, combine the milk, chia seeds, vanilla extract, ground cinnamon, nutmeg, and maple syrup.
Add the oats to this mixture and stir until everything is thoroughly mixed.
Distribute one-fourth of the oat mixture into two 8-ounce mason jars or airtight containers with lids.
