Ingredients

  • 14 ounce jar artichoke hearts packed in water
  • 1/4 cup 0% Greek yogurt
  • 1/4 cup Hellmann’s light mayonnaise
  • 1/3 cup Parmesan cheese
  • 1/2 cup shredded part skim mozzarella cheese
  • salt and black pepper
  • 2 tablespoons whole wheat bread crumbs
  • olive oil spray
  • 2 tablespoons shallots

Instructions

    Begin by setting your oven to 400°F to preheat.

    In a compact food processor, roughly chop the artichoke hearts along with the shallots until they are finely minced.

    In a medium mixing bowl, blend together the chopped artichokes, yogurt, mayonnaise, parmesan cheese, mozzarella, and season with salt and pepper.

    Transfer the mixture into a suitable oven-safe dish and sprinkle breadcrumbs on top.

    Lightly mist the breadcrumbs with olive oil, then place in the preheated oven and bake for 20-25 minutes, or until the dip is bubbling and the cheese has melted.
