Begin by setting your oven temperature to 350°F.
In a medium-sized skillet, heat over medium heat. Once warmed, add the oil and diced onions, cooking them until they turn a lovely golden color and become nearly crispy, which should take about 10 to 12 minutes while stirring occasionally. Once done, remove from heat and set aside.
In a separate medium bowl, whisk together the eggs, grated Parmesan cheese, and chopped parsley until well combined.
Arrange the artichoke hearts and sautéed onions evenly on the pie crust. Pour the egg mixture over the top and finish by sprinkling mozzarella cheese on top.
