Place the arugula in a mixing bowl, then drizzle with 2 tablespoons of olive oil, squeeze in the juice of half a lemon, and sprinkle with 1/4 teaspoon of kosher salt and black pepper. Gently toss to combine all ingredients evenly.
For plating, portion 1 cup of arugula onto each plate and garnish with 2 tablespoons of shaved Parmesan cheese on top of each serving.
