Ingredients

  • 1 tsp Dijon Mustard
  • kosher salt and pepper to taste
  • 1 pound thin asparagus
  • 2 tsp fresh chopped parsley
  • 1 1/2 tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil

Instructions

    In a medium-sized bowl, combine the mustard, vinegar, and 1 tablespoon of oil, whisking until blended. Incorporate the parsley and season the mixture with salt and pepper to taste.
