Avocado Egg Rolls with Sweet and Spicy Dipping Sauce

These Avocado Egg Rolls take a cue from the beloved version at the Cheesecake Factory, but with a wholesome twist—no frying involved! Prepare them effortlessly in an air fryer or opt for baking them in the oven for a lighter treat.

Ingredients

  • 12 ounces from 3 medium Hass avocados, cubed
  • Juice from 1-2 small limes
  • 1 teaspoon kosher salt
  • Freshly ground black pepper
  • 10 egg roll wrappers
  • Small bowl of water for sealing
  • Olive or canola oil spray
  • 2 tablespoons mayonnaise
  • 1 tablespoon sweet chili sauce
  • A few dashes of sriracha
  • 2/3 cup diced red onion
  • ¼ cup chopped sundried tomatoes
  • 1/3 cup chopped cilantro

Instructions

    In a medium mixing bowl, blend together avocado, lime juice, sundried tomatoes, onion, cilantro, and season with salt and pepper to your liking. Carefully mix until well incorporated.

    Take an egg roll wrapper and lay it flat on a clean surface, positioning it so that it resembles a diamond shape with the points at the top and bottom.

    Place approximately ¼ cup of the avocado mixture onto the lower third of the wrapper.

    Moisten your fingertip with a small bowl of water and trace it along the edges of the wrapper.

    Fold the bottom point of the wrapper over the filling, then bring the left and right corners in toward the center, and continue rolling tightly into a cylinder.

    Set the completed roll aside and repeat the process with the remaining wrappers and filling.

    Lightly spray all sides of the assembled egg rolls with cooking oil.

    Preheat your air fryer to 400°F. Cook the egg rolls in batches at this temperature for 6 minutes, flipping them halfway through, or until they achieve a golden-brown color.

    In the meantime, mix together mayonnaise, sweet chili sauce, and sriracha in a small bowl to create a dipping sauce, and set it aside.

    Preheat the oven to 400°F and lightly coat a baking sheet with oil.

    Arrange the egg rolls on the prepared baking sheet and bake until they are golden and crispy, approximately 16 to 18 minutes, flipping them halfway through the cooking time.
