Ingredients

  • 1 slice whole wheat or whole grain bread
  • Kosher salt and freshly ground black pepper
  • hot sauce
  • 1 large egg
  • 1 oz avocado
  • olive oil spray

Instructions

    Using a heart-shaped cookie cutter or the edge of a glass, create a hole in the middle of a slice of bread.

    In a bowl, use a fork to mash the avocado and add salt and pepper to taste.

    Preheat a skillet over medium-low heat and lightly coat it with cooking spray. Place the slice of bread and the cut-out piece in the skillet, then crack an egg directly into the center of the hole.

    Allow the egg to cook until the bottom is firm, which should take about 1 minute. Season with salt and pepper, then carefully flip it over with a spatula, adding salt and pepper to the other side as well.

    Continue cooking the flipped side until the yolk reaches your preferred doneness; I personally enjoy it when the yolk is still soft.

    Once cooked to your liking, remove from the skillet and top with the mashed avocado. Optionally, drizzle with hot sauce for an extra kick.
