Ingredients

  • 1 slice sourdough bread
  • 1 large egg
  • kosher salt
  • hot sauce
  • 1 ounce mashed
  • olive oil spray

Instructions

    In a small bowl, thoroughly mash the avocado and season it with a sprinkle of salt and pepper to taste.

    Place a small nonstick skillet on low heat. Once it’s warmed, lightly coat it with cooking spray and gently crack the egg into the pan. Cover the skillet and cook until the egg is set and the yolk reaches your preferred doneness.

    There are multiple techniques to prepare hard-boiled eggs; you can choose to boil them on the stove, use an air fryer, or opt for an Instant Pot method.

    In a small bowl, whisk the egg with a fork and add a pinch of salt for flavor. Heat a small nonstick skillet over low heat, and once it's warmed, spray it with oil and pour the beaten egg into the skillet. As the edges begin to firm up, gently fold the eggs until they are fully cooked, which should take about 2-3 minutes.

    Fill a small saucepan with water and bring it to a rolling boil. Crack an egg into a separate small bowl. Once the water is boiling, add 1 teaspoon of white vinegar and stir the water in a circular motion to create a whirlpool effect. Reduce the heat and carefully slide the egg into the center of the pot. Cook for 3-4 minutes, or until the yolk is cooked to your liking. Use a slotted spoon to remove the egg and place it on a paper towel to drain excess water.

    Spread the mashed avocado over a slice of toast, place the egg on top, and finish with a sprinkle of salt and pepper. Add hot sauce or red pepper flakes if you wish for an extra kick!

Notes & Tips

  • There’s many great bread options to make avocado toast. If I am using a fresh bread, I usually like to use my homemade sourdough bread, rye or pumpernickel. For a shelf stable bread, Dave’s Killer Bread thin sliced is my favorite. If you need a gluten-free bread, schar gluten free bread is a great option.
