Ingredients

  • 1 batch homemade bagels
  • 4 slices center cut bacon
  • 4 thin slices heirloom tomato
  • 4 ounces avocado
  • red pepper flakes
  • 8 large eggs
  • salt and pepper
  • olive oil spray

Instructions

    Toast the bagels according to package directions and allow them to cool slightly.

    Preheat a spacious nonstick skillet over medium heat and lightly coat it with cooking spray.

    Whisk the eggs together with a pinch of salt and pepper, cooking them until they are just set. Remove from heat and set aside.
