  • 8 ounces shredded Gruyère cheese
  • 12 large eggs
  • 1 cup nonfat milk
  • ½ teaspoon kosher salt
  • Freshly ground black pepper
  • ½ cup finely diced shallots
  • 5-ounce package baby spinach
  • 8 slices center-cut bacon

    Begin by heating your oven to 350 degrees Fahrenheit. Prepare a 9” x 13” casserole dish by spraying it with cooking spray and setting it aside for later use.

    In a spacious skillet, fry the bacon over medium heat until it reaches a crispy texture. Once done, use a slotted spoon to transfer the bacon onto a plate lined with paper towels to absorb excess grease.

    Carefully remove all but 2 tablespoons of the bacon drippings from the skillet, then introduce the shallots into the pan.

    Cook the shallots, stirring them occasionally, until they emit a fragrant aroma and start to turn golden at the edges, which should take about 2 minutes.

    Incorporate half of the spinach into the shallots, tossing them together, then add the remaining spinach and toss once more to combine.
