In a sizable plastic ziplock bag, combine the chicken, olive oil, apple cider, apple cider vinegar, salt, pepper, thyme, rosemary, and minced garlic. Ensure everything is well incorporated, then place the bag in the refrigerator for a minimum of 4 hours, or overnight for enhanced flavor.
Set your oven temperature to 400°F (204°C) to preheat.
Transfer the marinated chicken into a 9 x 13-inch baking dish, arranging the cabbage and apple slices around it.
Bake the dish for 30 minutes, then take it out of the oven. Flip the chicken pieces and spread mustard over the top.
Return the dish to the oven and continue baking until the chicken reaches a safe internal temperature and the apples soften, which should take about 35 minutes. Finish by sprinkling with fresh parsley for garnish.
