  • 4 sprigs fresh thyme
  • 1-1/2 tablespoons fresh rosemary
  • 4 garlic cloves
  • 1/2 medium head red cabbage
  • 1 large granny smith apple
  • 3 tablespoons Dijon mustard
  • 1-1/4 cups apple cider
  • 1/4 cup apple cider vinegar
  • 4 skinless, bone-in chicken legs

Instructions

    In a sizable plastic ziplock bag, combine the chicken, olive oil, apple cider, apple cider vinegar, salt, pepper, thyme, rosemary, and minced garlic. Ensure everything is well incorporated, then place the bag in the refrigerator for a minimum of 4 hours, or overnight for enhanced flavor.

    Set your oven temperature to 400°F (204°C) to preheat.

    Transfer the marinated chicken into a 9 x 13-inch baking dish, arranging the cabbage and apple slices around it.
