  • 3 tbsp flour
  • 2 cups fat free Real California milk
  • 7 ounces freshly grated Real California sharp cheddar
  • 1/2 teaspoons salt
  • 2 teaspoons olive oil
  • 1 tbsp Real California butter

    In a large pot, add 1 inch of water along with 1 teaspoon of salt, then bring it to a rolling boil. Introduce the cauliflower florets and cook them until they're tender yet still crisp, which should take about 6 to 7 minutes. Drain the cauliflower and transfer it to a spacious bowl.

    In a large saucepan, melt butter and pour in oil over medium heat. Toss in the chopped onions and sauté for approximately 2 minutes until they begin to soften.

    Incorporate the flour into the onion mixture. Lower the heat to a gentle simmer and continue to stir constantly for 3 to 4 minutes to eliminate the raw flour taste.
