Begin by preheating your oven to 450°F. Prepare a spacious baking sheet by giving it a light coating of cooking spray.
In a mixing bowl, blend together the breadcrumbs and grated Parmesan cheese. In a separate bowl, melt the butter. Use a brush to apply a thin layer of melted butter onto the chicken pieces, then coat them in the breadcrumb and cheese mixture. Arrange the coated chicken on the prepared baking sheet and continue the process with the remaining pieces.
Lightly mist the tops of the chicken with a bit more cooking oil, then place the baking sheet in the oven and let it bake for 25 minutes.
After 25 minutes, take the chicken out of the oven. Spoon approximately 1 tablespoon of marinara sauce over each piece and sprinkle 1 1/2 tablespoons of shredded mozzarella cheese on top of the sauce.
Return the chicken to the oven and bake for an additional 5 minutes, or until the cheese is bubbly and melted.
