Slice the cheese block in half to yield 24 individual pieces. Transfer the cheese to the freezer until it is thoroughly frozen.
In a small bowl, beat the egg until well combined. On a separate plate, pour out the flour.
In another bowl, mix together the bread crumbs, panko, grated parmesan, and dried parsley.
Take the frozen cheese sticks and first roll them in the flour, removing any excess. Next, dip them into the egg wash, and finally, coat them with the breadcrumb mixture.
Continue this method with the remaining cheese, arranging them on a tray lined with wax paper.
Return the coated cheese sticks to the freezer for at least 1 hour before baking (this step is essential; otherwise, they may melt before the coating turns golden).
When you're ready to bake, preheat your oven to 400° F.
Prepare a baking sheet by lining it with aluminum foil and lightly spraying it with cooking oil. Place the frozen cheese sticks on the prepared baking sheet.
