Ingredients

  • 2 medium ripe bananas
  • 1/4 cup honey
  • 1 cup uncooked quick or old fashion oats*
  • 1/4 cup chopped walnuts or pecans
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch of salt
  • 1 cup fat free milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cup blueberries

Instructions

    Begin by preheating your oven to 375°F. Lightly coat an 8 x 8" or 9 x 9" ceramic baking dish with cooking spray and set it aside for later use.

    Place the banana slices evenly across the bottom of the ceramic dish. Scatter half of the blueberries on top of the bananas, add 1/4 teaspoon of cinnamon, drizzle 1 tablespoon of honey, and cover the dish with aluminum foil.

    In a medium mixing bowl, combine the oats, half of the nuts, baking powder, the remaining cinnamon, and salt; mix well.

    In another bowl, whisk together the rest of the honey, milk, egg, and vanilla extract until well combined.

    Once the bananas have finished baking, pour the oat mixture evenly over the layer of bananas and blueberries.

    Next, carefully pour the milk mixture over the oats, ensuring it is evenly distributed. Top with the remaining blueberries and walnuts.
