In a sizable mixing bowl, blend the potatoes with 1/4 cup of broth, seasoning with salt and pepper. Set this mixture aside for later use.
In a skillet, gently sauté the garlic and onions in oil over low heat. After a couple of minutes, add the parsley, salt, and pepper, continuing to cook until the vegetables are tender, approximately 2-3 minutes.
Stir in the turkey along with the remaining broth, ensuring everything is well combined, then turn off the heat.
Incorporate the turkey mixture into the mashed potatoes, using your clean hands to blend thoroughly. Taste the mixture and add more salt if necessary.
Preheat your oven to 450°F.
Take 1/4 cup of the combined mixture and shape it into croquettes. Arrange them on a sheet of wax paper. Continue this process with the rest of the mixture.
Coat each croquette in the egg mixture, followed by a roll in breadcrumbs, then place them on a cookie sheet lined with parchment paper for easy cleanup. Generously spray the croquettes with olive oil, roughly 1 tablespoon. Bake in the oven for about 15 minutes, or until they achieve a golden-brown color.
