Begin by heating your oven to 425°F. Prepare two large baking trays by applying a coat of cooking spray and setting them aside for later use.
Slice each zucchini into 16 uniform sticks, ensuring they measure approximately 3 inches in length and 1/2 inch in thickness.
In a small mixing bowl, whisk the egg whites and season them with a pinch of salt and pepper. In a separate medium bowl, mix together the breadcrumbs, Romano cheese, and garlic powder until well combined.
Take the zucchini sticks and first immerse them in the egg whites, then transfer them to the breadcrumb mixture, working with a few at a time to ensure they are evenly coated.
Arrange the coated zucchini sticks in a single layer on the prepared baking sheets, and give them a light spray of cooking oil on top. Bake them in the oven for approximately 22 to 25 minutes, or until they achieve a golden brown hue. Serve with 1/2 cup of marinara sauce for dipping, if you like.
For an air fryer version, preheat it to 400°F. Cook the zucchini sticks in a single layer, in batches if necessary, for 12 to 14 minutes, flipping them halfway through the cooking time until they are golden and crispy.
