Ingredients

  • 1/2 very ripe banana
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 1 tsp oil of your choice
  • mini chocolate chips, sprinkles, chopped walnuts, chopped pecans, hemp seeds, etc
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon sugar

Instructions

  1. 1

In a small bowl, thoroughly mash the banana, then incorporate the oil and vanilla extract until well combined.

  2. 2

In a small espresso mug, combine the flour, sugar (if desired), baking powder, and salt. Use a fork to mix everything together until evenly blended.

  3. 3

Stir in the mashed banana, and feel free to fold in any extras such as chocolate chips, nuts, or other desired mix-ins.

  4. 4

Place the mug in the microwave and cook for 90 seconds. Afterward, allow it to cool for about 1 minute before enjoying. If you're preparing a double serving in a larger mug, increase the cooking time to 2 minutes.

Notes & Tips

  • Oven: If you don't have a microwave, you can bake this in a preheated oven in a ramekin of cupcake liner. Bake until the tops are golden and a toothpick inserted in the center comes out clean, 325F for 25 to 30 minutes.
  • Air Fryer: If you want to bake this in the air fryer, preheat the air fryer to 300°F. Bake until the tops are golden and a toothpick inserted in the center comes out clean, about 15 minutes. Let cool before eating.
