Ingredients

  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1 cup 1% milk
  • 3 large egg whites
  • 2 tsp oil
  • 1 tsp vanilla
  • 2 tbsp chopped walnuts
  • olive oil or butter flavor cooking spray
  • 1/4 tsp salt
  • 1 large banana
  • 1/4 tsp cinnamon

Instructions

    In a mixing bowl, whisk together all the dry components until well combined. In a separate bowl, whip the egg whites until they reach a light and airy consistency.

    In another bowl, blend the milk, oil, vanilla extract, and mashed bananas until the mixture is uniform. Gently fold in the whipped egg whites.

    Gradually incorporate the wet mixture into the dry ingredients, stirring with a spoon until there are no visible dry patches. Be careful not to over-mix the batter.
