Bananas Fosters Topped Overnight French Toast

Ingredients

  • cooking spray
  • 1-1/2 cups fat free milk
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup agave or white sugar
  • 1/4 tsp salt
  • 1 tsp Meyers rum or rum extract
  • 1 tbsp light butter
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp Meyers rum or 1 tsp rum extract
  • 4 medium ripe bananas
  • 2 large eggs
  • 1 cup egg substitute
  • 10 oz Challah bread

Instructions

    Lightly coat a 13 x 9-inch baking dish with non-stick cooking spray.

    Place the slices of bread in a single layer within the baking dish, gently pressing them together to fit snugly.

    In a sizable mixing bowl, beat together the eggs, egg substitute, milk, vanilla extract, 1/2 teaspoon of cinnamon, agave or sugar, salt, and rum until fully mixed. Pour this mixture evenly over the bread. Cover the dish and let it chill in the refrigerator for a minimum of 8 hours or overnight for optimal flavor absorption.

    Preheat your oven to 350° F and allow the bread to reach room temperature.

    Bake the dish uncovered in the center of the oven until it has puffed up and the edges turn a light golden color, approximately 40 to 45 minutes.

    While the French toast is baking, melt the light butter in a large, deep sauté pan over low heat.

    Stir in the brown sugar, cinnamon, vanilla, and rum, mixing until the sugar has fully dissolved. If necessary, add a few drops of water and let the sauce simmer for about 2 minutes.

    Incorporate the sliced bananas into the sauce and remove the pan from the heat.
