In a medium-sized bowl, mix together mayonnaise, Thai sweet chili sauce, and Sriracha. Set this mixture aside for later use.
In a separate bowl, toss together the lettuce and cabbage, then distribute the mixture evenly onto four plates. Set these plates aside.
Dredge the shrimp in cornstarch, ensuring each piece is thoroughly coated by using your hands to mix them well.
Heat a large skillet or wok over high heat. Once the pan is hot, pour in the oil. When the oil shimmers, add the shrimp to the pan and stir occasionally, cooking until they are fully cooked, which should take about 3 minutes.
