Ingredients

  • 2 1/2 tbsp light mayonnaise
  • 2 tbsp scallions
  • fresh cracked pepper
  • oil spray
  • 40 large
  • 1 1/2 tbsp Thai Sweet Chili Sauce
  • 1/2 tsp Sriracha

Instructions

    In a small mixing bowl, blend together the mayonnaise, chopped scallions, sweet chili sauce, and sriracha. Once combined, set this mixture aside.

    If using wooden skewers, immerse them in water for a minimum of 20 minutes to prevent burning (metal skewers can be used to skip this step).

    Lightly sprinkle pepper over the shrimp to season them.

    Thread 5 shrimp onto each of the 8 skewers.

    Preheat a clean grill that has been lightly coated with oil to a medium temperature. Once the grill reaches the desired heat, carefully add the shrimp, making sure not to scorch the skewers.

    Cook the shrimp for approximately 6 to 8 minutes in total, flipping them halfway through, until they turn opaque and are fully cooked.

    Transfer the grilled shrimp to a serving platter and promptly brush the prepared sauce over them; serve right away.
