Begin by heating your grill to a medium-high setting or preheat your oven to 425°F.
Cut out four large pieces of aluminum foil, each measuring 18 x 12 inches, and lay them flat on a clean surface.
In the center of each foil square, distribute 3/4 cup of frozen mixed vegetables.
Season the chicken pieces with salt, garlic powder, and paprika. Apply 1/4 cup of BBQ sauce to both sides of the chicken, then place two pieces (one drumstick and one thigh) in the center of each foil square.
Fold up the longer sides of the foil so that they meet above the chicken. Securely double-fold the ends, ensuring there is enough space inside for steam to circulate. Then, double-fold the shorter ends to completely seal the packets, preventing any steam from escaping.
Position the foil packets on the preheated grill over medium-high heat. Cover and cook them using indirect heat for 50 to 55 minutes, or until the chicken is thoroughly cooked and reaches an internal temperature of 160°F when checked with an instant-read thermometer.
Carefully take the packets off the grill and gently open them. Brush the chicken with the reserved BBQ sauce and leave it uncovered to cook for an additional 5 minutes. If desired, sprinkle with fresh parsley for garnish.
If using the oven, ensure it is preheated to 425°F.
Arrange the foil packets on a baking sheet and bake them for 50 to 55 minutes, or until the chicken is fully cooked, tender, and registers an internal temperature of 160°F with an instant-read thermometer.
Once the baking sheet is removed from the oven, gently open the foil and brush the chicken with the remaining BBQ sauce. Return to the oven for 5 minutes uncovered, and finish with a garnish of fresh parsley if you like.
