Thinly slice the steak against the grain, aiming for the thinnest cuts possible. Generously season with salt and pepper, then set it aside.
In a small mixing bowl, combine the sake (if you're using it), tamari, vinegar, and honey, stirring until everything is well mixed and dissolved.
Heat a large wok or a sturdy skillet over high heat. Pour in a small amount of oil and lay the steak in an even layer across the surface.
Sear the steak, flipping it once, until both sides develop a rich brown crust, which should take approximately 3 minutes total. Once browned, transfer the meat to a bowl.
In the same pan, add the green beans along with the sauce mixture. Let it simmer vigorously, stirring occasionally, until the sauce reduces by half and the beans reach an al dente texture, around 3 minutes.
