Ingredients

  • 3 tablespoons chopped almonds
  • 1 -1/2 tablespoon cider vinegar
  • 4 oz soft goat cheese log
  • 1 teaspoon minced shallots
  • 1 tbsp honey
  • 5 oz 8 cups mixed baby greens
  • 1- 1/2 cups sliced strawberries
  • 1 tablespoon red wine vinegar
  • 3 tablespoons chopped craisins
  • 2- 1/2 tablespoons olive oil

Instructions

    Using your hands, shape the cheese into 12 small spheres, each weighing approximately 1/3 oz. In a separate small bowl, mix together the nuts and craisins. Coat each cheese ball in the nut mixture and place them in the refrigerator until you are ready to serve.
