  • 2 cups petite diced tomatoes and their juices
  • 1/2 cup cilantro
  • warm soft corn tortillas
  • cooked rice
  • pickled jalapenos
  • 1 tablespoon olive oil
  • 1 large white onion
  • 2 teaspoons kosher salt
