Ingredients

  • 1 tablespoon olive oil
  • 3 1/2 cups water
  • 1 packet Sazon with achiote
  • 1 large vegetable or chicken bouillon cube
  • 1 teaspoon kosher salt
  • 1 can black beans
  • 2 cups long grain rice
  • 1/4 cup sofrito

Instructions

  1. 1

In a medium-sized heavy-bottomed pot with a snug-fitting lid, warm the oil over medium heat.

  2. 2

Introduce the sofrito to the pot and sauté it until it softens and releases its aroma, stirring for about 3 to 4 minutes.

  3. 3

Incorporate the rinsed beans and rice into the pot, mixing everything together thoroughly.

  4. 4

Pour in the water along with the sazon, bouillon, and salt, stirring to combine. Allow the mixture to come to a boil over medium heat until the liquid has nearly evaporated, just barely covering the rice.

  5. 5

Swiftly place the lid on the pot and reduce the heat to low, cooking for 15 minutes.

  6. 6

Remove the pot from the heat and let it rest for an additional 5 to 8 minutes without lifting the lid, allowing the steam to finish cooking the rice.

  7. 7

Use a fork to gently fluff the rice before serving, and enjoy your dish.
