Ingredients

  • 16 ounce bag black eyed peas
  • 1/2 red onion
  • 2 bay leaves
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon ground black pepper
  • 1/4 cup + 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons kosher salt
  • Optional: add diced carrots
  • 2 tablespoons extra virgin olive oil
  • 4 cups water
  • 1/3 cup Italian parsley

    Place the black-eyed peas, bay leaves, and water into the instant pot. Set it to high pressure and cook for 9 minutes. Once the cooking time is up, allow for a natural release, then carefully remove the lid and strain the peas. Discard the bay leaves and let the peas cool completely.

    Next, in a large mixing bowl, combine the cooled peas with the chopped onion, parsley, lemon juice, olive oil, red wine vinegar, salt, and black pepper. Stir the mixture thoroughly to incorporate all the ingredients. Taste the salad and adjust the salt and lemon juice according to your preference.
