Ingredients

  • 4 large hard boiled eggs
  • ¼ teaspoon kosher salt
  • teaspoon black pepper
  • 2-3 tablespoons Old bay seasoning
  • 2 slices turkey bacon
  • 4 cornichon
  • 1 stalk celery
  • ½ teaspoon cornichon pickle juice
  • 2 tablespoons light mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

    Prepare the eggs by hard boiling them using either the traditional stove top method or the Instant Pot technique for hard boiled eggs.

    As the eggs are cooking, crisp up the bacon in a skillet over medium heat. Once it's nice and crunchy, place it on paper towels to absorb excess grease.

    Once the eggs are done, carefully peel them and slice each one in half lengthwise. Gently scoop out the yolks and place them in a mixing bowl.

    On a plate, sprinkle a layer of Old Bay seasoning, then either dip the flat side of each egg white into the seasoning or simply dust the tops lightly.

    In the bowl with the yolks, combine mayonnaise, mustard, pickle juice, salt, and pepper, then mash everything together until smooth.

    Transfer the yolk mixture into a plastic bag, cut a small opening in one corner, and use it to fill the egg whites with the creamy filling.

    Garnish each egg with a piece of crumbled turkey bacon, a half slice of pickle, and a slice of celery for added crunch and flavor.
