Ingredients

  • 3 slices center cut bacon
  • 2 slices light whole wheat bread
  • 1 tablespoon light mayo
  • 2 thin slices beefsteak tomatoes
  • 1 large egg
  • 2 to 3 iceberg lettuce leaves

    Place a medium nonstick skillet on the stove and set the heat to medium. Introduce the bacon to the pan and allow it to cook for about 5 to 6 minutes, flipping it halfway through until it reaches a crispy texture. Once done, transfer it to a paper towel to absorb excess grease, wiping out some of the fat from the skillet while retaining a small amount for frying the egg. Crack the egg into the skillet, cover it, and let it cook until the yolk becomes firm.

    At the same time, toast the slices of bread. To construct the sandwich, spread mayonnaise on one slice of bread, followed by the cooked egg, then layer on the lettuce, crispy bacon, and slices of tomato. Slice the sandwich in half and enjoy immediately.
