Gently peel away 2 sizable outer leaves from a head of lettuce. If one happens to tear, don’t worry—just keep it for the third leaf that you will shred later. Shred that third leaf and put it aside for later use.
Chop the tomato into small pieces and place them in a bowl.
Mix the chopped tomato with mayonnaise and a sprinkle of freshly ground black pepper.
Arrange the lettuce cups on a serving plate, fill them with the shredded lettuce. Layer the tomato mixture and crispy bacon, then roll them up like a wrap and enjoy!
