Fathers have a special fondness for bacon, which inspired me to create a refreshing bacon, lettuce, and tomato pasta salad that's ideal for your Father's Day gathering. Ingredients

  • 8 oz uncooked elbows
  • 4 slices 25% reduced fat center cut bacon
  • 2 cups baby spinach
  • 4 tbsp reduced fat mayonnaise
  • salt and fresh pepper to taste
  • 2 large ripe tomatoes
